When I attempt to install Team Foundation Server (I've tried both single-server and dual-server install) I get to a dialog which has only one option on it - Uninstall.
Huh I've never had TFS installed on this machine to begin with! I even humored it by running the uninstall, but this didn't help at all. On the next installation attempt I still come to the same impasse. The installer only offers the option to uninstall.
Any idea what might be wrong Thanks for any advice which you can offer!

Be sure to follow the steps in the beta 2 installation guide http://www.microsoft.com/downloads/details.aspx FamilyId=E54BF6FF-026B-43A4-ADE4-A690388F310E&displaylang=en. It's very difficult to get the installation up and running without following all of the steps in the proper order.

My error log is very similar to what Joseph has ie. "SQL Server 9 service is either not started..." etc, when I KNOW it is (as well as Analysis Server, Report Server, etc).
The error file that's generated is a *.log file, but rather the dd_vsinstall80.txt file mentioned earlier.
Does it matter if I'm trying to install on a VM of Windows 2003
I've literally spent days on this, and beginning to wonder if I'm better off just waiting until all the bugs are worked out.....

I don't have any such log files on my machine. After attempting to run Setup, what I do find are:

Some different thoughts/comments ...
One of the key logs that we look at is VSMsi*.log file where * is a number. This log comes into being once the MSI part of setup is running.
The fact that you are seeing the option to Uninstall tells me that the system thinks that at some prior point TFS was already installed on this box and was never uninstalled. This is MSI doing its magic.
If you look at Brad Abrams blog (http://thedotnet.com/blogs/brad_abrams/archive/2005/06/24/438823.aspx) he mentions where you can download the MSIINV utility. This tool will take an inventory of your system and not everything that is installed. Its a command line tool and I suggest capturing the output to a log file. Take a look thru and make sure TFS isn't somewhere in the list.
If you do see it, you'll want to make sure it is uninstalled before you try again. You might be able to use Add/Remove programs or MSIZAP to delete the product from the MSI database.

OK, April CTP makes sense. I understand that the April SQL Server CTP is required to support the latest VS Team Foundation Server.
I followed the documentation and I don't see anything which is obviously missing. On the other hand, there must be something fundamentally and radically wrong since the installer log files show that EVERY pre-requisite seems to be missing (see below).
Basically, the installer reports that all SQL Server services are missing, IIS is missing, Sharepoint Portal is missing and Sharepoint Web Extensions are missing. (Other than that, the platform's ready for TFS! :-)
This is ridiculous. These services are absolutely installed and running. What could be so fundamentally wrong that all of these freshly installed SQL Services are reported as missing, IIS 6 is reported as missing, although I've got a web site up and running on this very box. (You can verify this at http://www.fpsnow.com.) Sharepoint is also installed and running (although you can't see this site from the outside).

Can you provide us with the VSMsi*.log file from this machine
And, please note that if you are using the June CTP of TFS then you cannot install on 1 box. There are some version # conflicts that require a 2 box installation.
