I can't seem to find any documentation for XCOPY. If someone could point me to any documentation that would explain it's syntax and how to use it, I would be grateful.

Yes, this looks it's what I've been looking for... I assume this is what MS has been referring to when hyping Click Once deployment and XCOPY.
